Thanksgiving is just around the corner for our American friends and I thought I’d try my hand at improving my standard pumpkin pie. Instead of using canned pumpkin or steaming the pumpkin as I have in the past, I decided to try roasting the pumpkin instead. The result brought out more of the pumpkin’s natural sweetness and reduced the water content, which think helped improve the creamy texture of this delicious pie. I had a couple of die hard Pumpkin Pie fans try it and they declared it to
be the best they had ever tried.

Mini Apple Rose Pies

I’m obsessed with mini things. I recommend using an apple like Pink Lady, Braeburn or Honeycrisp – something crisp, firm, sweet and a bit tart with a pinkish hue on the skin. A regular Red Delicious lunchbox apple won’t give you great results here because the texture is too mealy, the skin too bitter and the flavor not intense enough. Fuji or Golden Delicious will work in a pinch.

You can shortcut the recipe and save yourself about an hour and purchase already made pie dough – look for “all butter” pie dough. Honestly, it’s easy enough to make yourself (it’s like playing with Play-doh! lol), but sometimes you just don’t wanna, and I get that. But make it from scratch, at least once. It’ll rock your world.

I don’t care that it’s not even Halloween yet!

Oh, I know how it goes. Every year around this time, I think I have all this time to post Thanksgiving recipes on this little food blog of mine. I think, “It’s not even Halloween yet. I’ve got all the time in the world!” Then it happens. It’s the same every year. We dress up our children in Iron Man and Richard Nixon costumes, go trick-or-treating in our quaint little town, then by the time they’re on their last piece of candy–which is actually like twenty hours later–it’s suddenly Christmas. And I’m looking around my kitchen and my little food blog like, “Okay…what just happened?”

And then I ask my children if they have any candy left because I’m having a wicked sugar craving.

And they tell me to go bake a pie or something. Smart-alec little varmints.

Anyway, today I’m sharing my step-by-step method for brining a turkey. I brine a turkey every year.
